We are looking to add an Assistant Sausage Maker to be a part of the Lake Geneva Country Meats team. We produce a variety of award-winning sausages products, and this position will be involved from start to finish in the manufacture of these items.


This position is available for candidates new to the industry who wish to learn the craft of sausage-making, as well as candidates who are experienced in meat production or culinary fields and want to be a part of a family-owned business. Increased experience will be reflected in the salary position. This is a full-time position with a Monday - Friday schedule and benefits available.

Job summary


An assistant sausage maker is an entry-level role that participates in every step of sausage-making operations from grinding to stuffing to cleanup. An assistant sausage maker will work at the direction of a head sausage maker and fill in tasks that are not being completed by the head sausage maker.


Essential functions

  • Participate in all aspects of the sausage production process, including:
    • Trimming and grinding meats.
    • Injecting and tumbling cured meats.
    • Mixing and chopping sausage products.
    • Stuffing sausage products.
    • Linking and clipping sausage products.
    • Operating a smokehouse for sausage production.
  • Assist with packaging tasks such as paper-wrapping meat, running a thermoform fill-seal package, operating a vacuum sealer, and more as necessary.
  • Label products properly using a deli scale and a computer-controlled industrial label printer as necessary.
  • Assist in receiving and stocking supplies.
  • Follow USDA food safety guidelines.
  • Complete daily maintenance end-of-day sanitation tasks.

Work environment


This position works in various environments, including our processing floor and cooked product packaging room. These rooms are kept at cool temperatures. Trips in and out of freezers and coolers are necessary.


Physical requirements

This position must be able to:

  • Fluently communicate verbally and in writing in the English language.
  • Safely work with sharp objects such as knives and scissors.
  • Lift up to 60 pounds.
  • Stand for an 8 hour shift: 2 - fifteen minute rest breaks and 1 - thirty minute meal break are provided during a shift.
  • Operate in a cool packaging environment, as well as operate in coolers kept in the 40º range, to freezers that are kept in the 0º range.

Education and experience

  • This is an entry-level position with no experience required, although previous meat processing or culinary experience would be beneficial and would be reflected in the offered wage.
